Heavenly Chocolate Pie

Bake a 9” pie shell.

Meringue Layer:  Beat together 2 egg whites (save yolks for chocolate layer), ¼ teaspoon cream of tartar, ¼ teaspoon salt, and ¼ teaspoon cinnamon until stiff but not dry. Continue beating and gradually add ½ cup sugar until very stiff.  Spread meringue over the bottom and sides of baked pie crust.  Bake at 325 degrees for 15 – 18 minutes until lightly browned.  Cool.

Dark Chocolate Layer:  Melt 6 oz. semi-sweet chocolate chips.  Blend in ¼ cup water and 2 egg yolks.  Cook over low heat, stirring constantly until smooth.  Spread a thin layer over the meringue layer.

Whipped Cream Layer:  Beat together 1 cup heavy whipping cream, ¼ cup sugar and ¼ teaspoon cinnamon until thick.  Spread ¾ - 1 cup mixture over the dark chocolate layer.

Chocolate Whipped Cream Layer:  Fold remaining chocolate mixture into remaining whipped cream.  Spread on top of the whipped cream layer.

Chill at least 4 hours before serving.
